Description

Push open the door with its madeleine-shaped handle and enter the sophisticated Gilles Marchal shop, nestling on the hills of Montmartre, a 3-minute walk from the Wall of Love. The neighbourhood exudes a village-like spirit that immediately appealed to the great pastry chef.

After sojourns at Plaza Athénée, Le Bristol and the Maison du Chocolat, this renowned chef finally settled here at the corner of Rue Ravignan. He reinterprets pâtisserie classics and showcases them in other forms, such as strawberry in verrine, the renowned circular Paris-Brest choux pastry reborn as an éclair de Brest, and the casse-noisette, a slim opera cake with a chestnut and chocolate flavour…

But the signature bake of the chef from the Lorraine region is of course the madeleine cake, which he showcases in a series of original flavours: plain, coated, stuffed with mirabelle plum, lemon, pine honey, and even truffle or foie gras for the festive season. Gilles Marchal was born with a madeleine in his mouth, and his reinterpretations afford the ultimate in gourmet pleasure!
