What better way to commemorate a cycle race than to create a pastry? That must be what Louis Durand thought to himself when he created the Paris-Brest. Indeed, this sweet was brought to life in 1910 at the Pâtisserie Durand, in Maisons-Laffitte, west of Paris, not far from its famous château and the route of the cycle race that inspired its name. This delicious dessert is made with choux pastry, taking the shape of a wheel sprinkled with tasty almond slices and filled with a praline cream.
The Durands are said to make the best Paris-Brest in the Paris Region, with nobody able to match them. And for good reason: the secret recipe has been closely guarded by the members of the family ever since! While this dessert may be its speciality, Pâtisserie Durand also makes many others. There is something for everyone!
