Description

Childhood friends Florent, Clément and Yannick are the men behind the Résistants, who have become a real labour of love for them. They scoured France for top-notch farmers, and are intent on showcasing their work.

The restaurant is a tribute to these valiant “résistants”, bound by the values they share: a belief in sustainable, organic farming, using traditional methods that respect animal welfare and nature, and resulting in truly flavourful products.

Each plate served is a demonstration of this ethos. The dishes are brimming with the very best of French regional produce, put together in ways that show serious culinary know-how. Take, for example, the oeuf parfait, made with biodynamic eggs from the Ferme des Bleuets, the Nantaise carrots, or Emmanuel Chavassieux’s peppered dried beef… All to be savoured in a charming décor, dominated by natural fibres (rattan and wicker), which helps convince guests that epicureanism is, above all, about human contact and simple pleasures!
