Here is an opening that creates the event! The two chefs Aurélien Rivoire and Yannick Alléno, already collaborators in the very famous Pavillon Ledoyen, have joined forces to open a chocolate shop. This new temple of chocolate luxury is located near the rue Cler, between the Eiffel tower and les Invalides. It is an ideal setting to exhibit the chocolate wonders of these two great chefs.
The artist and sculptor Laurence Bonnel has staged this place so that each chocolate becomes a real jewel. Trompe l'oeil arch, cylindrical displays, Carrara marble… a contemporary place with a vintage spirit.
Alléno & Rivoire, Cocoa at its best
To stand out from other chocolate makers, it is an experience that is proposed here. The starred chef and the pastry chef propose a chocolate 2.0 harvested from the four corners of the world. Cold extraction, without sugar or cream and without stabilizers, is a precise work for a healthier result and a glycemic index that goes up to -90%. A chocolate factory that will mark the history of cocoa!
Their creations come in 3 main collections: the Creatives, illustrating the mood of the chefs and the seasons; the Heritages, reflecting the chocolate tradition; and finally the Tablettes, based on caramelized dried fruits, Grands Crus and pralines. Like a 3-star dessert in a palace! Ganache without cream and fruit flavors are made in a natural way for maximum taste and pleasure.
